7-Up Salad
A staple at special occasions growing up, 7-up salad is not a dessert (despite everyone's initial intuition) and is served as a side dish, right next to the turkey and potatoes.
Ingredients
Instructions
The Salad
-
Dissolve jello and miniature marshmallows in boiling water.
-
Place diced bananas and crushed pineapple (drained, save the juice) in a large salad container.
-
Add the 7-up, as well as the jello and marshmallow mix to the salad container and place in the fridge to set.
The Dressing
-
Mix sugar and flour well in pan
-
Add pineapple juice and cook on medium heat until thick, stirring constantly.
-
Beat egg and gradually add a little of the hot, thickened mixture to the beaten egg, stirring constantly to warm the egg (so that it doesn’t become lumpy when added to the hot mixture).
-
Slowly add the egg to the hot mixture, stirring constantly, and cook on low heat for an extra minute or two.
-
Add butter to the dressing and refrigerate to cool.
Serving
-
Immediately before serving, whip cream and fold into dressing (alternatively use 1 pack of Cool Whip). Spread dressing on top of salad and sprinkle grated cheese on top for colour if desired.
