7-Up Salad

A staple at special occasions growing up, 7-up salad is not a dessert (despite everyone's initial intuition) and is served as a side dish, right next to the turkey and potatoes.

Ingredients

The Salad

  1. Dissolve jello and miniature marshmallows in boiling water.

  2. Place diced bananas and crushed pineapple (drained, save the juice) in a large salad container.

  3. Add the 7-up, as well as the jello and marshmallow mix to the salad container and place in the fridge to set.

The Dressing

  1. Mix sugar and flour well in pan

  2. Add pineapple juice and cook on medium heat until thick, stirring constantly.

  3. Beat egg and gradually add a little of the hot, thickened mixture to the beaten egg, stirring constantly to warm the egg (so that it doesn’t become lumpy when added to the hot mixture).

  4. Slowly add the egg to the hot mixture, stirring constantly, and cook on low heat for an extra minute or two.

  5. Add butter to the dressing and refrigerate to cool.

Serving

  1. Immediately before serving, whip cream and fold into dressing (alternatively use 1 pack of Cool Whip). Spread dressing on top of salad and sprinkle grated cheese on top for colour if desired.
